I’m no nutritionist and I’m certainly not a chef, but I love to run and I love to eat. Here are several meals that are healthy and great for runners. Check them out and let me know if you love them as much as I do!!

Blueberry Mango Smoothie
This feeds 4-5 people and is packed full of protein. I love the spicy kick and have also served this with fresh mango salsa that is also delsih!

Love, love, love this salad, especially in the summer! The perfect, healthy salad for runners!
Blueberry Chopped Chicken Salad
A wonderful soup for a fall or winter afternoon. I like to add extra cracked black pepper and a finely chopped red chili to spice this up!!
Roasted Butternut Squash Soup
Dinner:
This is a flavorful pasta (I use gluten free..) and a light dish that you can whip up in a flash…I often replace the rosemary with basil. YUM!
Spicy Garlic Shrimp and Tomato Spaghetti
Runners need iron!! Here is a great, red meat dish that is both healthy and tasty.
Stir Fry Steak and Veggies
Deena Kastor is an awesome running mom that just happens to have an Olympic medal and multiple American records- She’s simply awesome. And she can cook!! I have a slight obsession with Mexican food and Deena’s enchiladas are excellent!
